Program Overview
Applied Practice of Culinary Medicine is a blended online program for health professionals and educators who want to put culinary medicine into practice.
It moves past foundational concepts to the applied work of empowering patients toward realistic food preparation goals, adapting recipes to medical and cultural realities, and delivering culinary medicine education in clinical, public health, and community settings.
Culinary medicine is being built into hospitals, health systems, medical schools, and community programs faster than the workforce is being trained to deliver it. Knowing the evidence is not the same as being able to run a cooking demonstration for a clinic audience or help a patient with a limited budget and little confidence change what happens in the kitchen on a Tuesday night. This program develops those capabilities through practice rather than exposure.
Through live sessions and self-paced content, participants learn to assess what shapes a person’s ability to cook and eat differently—readiness, confidence, skills, food access, time, budget, culture, and family circumstances—and to translate evidence-informed nutrition guidance into goals a patient can meet. Condition-focused units pair clinical nutrition guidance with recorded cooking workshops across cardiovascular disease, weight and diabetes, cancer prevention and surveillance, healthy aging and brain health, children and families, and underserved communities. Participants also learn to use artificial intelligence tools responsibly for recipe discovery, cultural adaptation, patient education, and workload reduction.
The program culminates in a capstone implementation plan for integrating culinary medicine into the participant’s own clinical, educational, public health, or community setting, with objectives, anticipated barriers, and an approach to evaluation.
Completion of Fundamentals of Culinary Medicine prior to this course is highly recommended, but not required.

The program suits participants at any career stage, from students and trainees to experienced professionals building or expanding culinary medicine initiatives, and it is designed to adapt to different cultural, geographic, and resource contexts.
Completion of Fundamentals of Culinary Medicine is recommended but not required. Participants should have an interest in nutrition, cooking, health behavior, or patient education, access to a basic kitchen for selected practice activities, and a willingness to complete independent practice and a capstone project.
This blended online program combines self-paced recorded instruction with live virtual sessions and independent practice. Learning draws on expert presentations, case-based learning, culinary demonstrations, coaching practice, peer interaction, hands-on online cooking, and applied project work.
Live sessions will involve practicing culinary coaching, reviewing personal and professional goals, joining a remote cooking workshop, receiving peer and faculty feedback, and presenting capstone work. Between sessions, participants work through recorded modules filmed in a teaching kitchen, which pair nutrition guidance with step-by-step culinary technique, and complete independent practice that reinforces nutrition, cooking, coaching, and implementation skills.
The emphasis throughout is on application. Participants move from observing demonstrations to performing the skills themselves, adapting recommendations to real-world circumstances, and building a capstone plan tied to their own professional setting.
